Southern Peach Cobbler (Gluten Free)

If you've been missing the kind of fruit cobbler that bubbles up golden and fragrant from the oven, this one brings it all back — without a trace of gluten. Fresh summer peaches do the work here. The batter is thin by design; trust the process and you'll pull a perfect cobbler from the oven every time.

Ingredients

  • About 5 medium peaches (approximately 3 cups), peeled and sliced 1/4 to 1/2-inch thick
  • 1 cup sugar, divided
  • 1 cup gluten-free flour blend without gum (such as a rice flour-based all-purpose GF blend)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk (dairy or dairy-free — unsweetened coconut milk works beautifully)
  • 1/4 cup butter, softened to room temperature (or dairy-free butter substitute)
  • 1/2 to 1 tsp ground cinnamon, to taste

Instructions

  1. Preheat your oven to 350°F. Grease a 3-quart baking dish.
  2. Wash, dry, peel, and slice the peaches into 1/4 to 1/2-inch thick slices. Set aside.
  3. In a mixing bowl, whisk together 3/4 cup of the sugar, the GF flour, baking powder, and salt.
  4. Stir in the softened butter until the mixture resembles coarse crumbs, then stir in the milk. The batter will be fairly thin — this is correct. Do not add more flour.
  5. Pour the batter into the prepared baking dish. Lay the peach slices on top of the batter in a single layer. There is no need to press them in — just lay them gently on top.
  6. Sprinkle the cinnamon and the remaining 1/4 cup of sugar evenly over the peaches.
  7. Bake 40–45 minutes, until the cobbler pulls away from the edges of the dish and the top is light golden brown and set in the center.
  8. Cool to just warm before serving. Serve as-is, or with vanilla ice cream, dairy-free ice cream, or whipped topping.
