Flaky cod, a golden spiced crust, and a pan sauce built from butter, garlic, lemon, and a splash of chicken broth — ready in 25 minutes. The cast iron skillet gives you the sear you need to build that beautiful golden crust, then the pan sauce comes together in the same skillet while the fish rests on the plate.

Ingredients

  • 4 cod fillets (6 oz each), skinless, about 1-inch thick
  • 1 Tbsp all-purpose flour
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 1/8 tsp cayenne pepper
  • 3/4 tsp salt, or to taste
  • 3/4 tsp freshly ground black pepper
  • 5 Tbsp butter, cut into 1 Tbsp pieces, divided
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 1/2 Tbsp low-sodium chicken broth
  • 1 1/2 Tbsp fresh lemon juice
  • 1 Tbsp chopped fresh parsley

Instructions

  1. In a small bowl, whisk together the flour, paprika, onion powder, thyme, oregano, cayenne, salt, and pepper.
  2. Sprinkle the seasoning mixture evenly over both sides of each cod fillet, using all of the mixture.
  3. Heat your cast iron skillet over medium-high heat. Melt 1 Tbsp of the butter with the olive oil.
  4. Add the cod fillets and sear until golden brown and cooked through, about 3–4 minutes per side. The fish is done when it flakes easily with a fork. Transfer fillets to serving plates.
  5. Reduce the heat to medium-low. Add the remaining 4 Tbsp butter to the same skillet and melt.
  6. Add the minced garlic and saute just until fragrant and lightly golden — about 15 seconds. Do not brown.
  7. Remove the pan from the heat. Carefully pour in the chicken broth and lemon juice — the pan will steam. Stir to combine.
  8. Immediately pour the lemon butter sauce over the cod fillets. Sprinkle with fresh parsley and serve warm.
