This version builds its own GF flour blend from scratch — tapioca, rice, potato starch, garbanzo/fava, and sorghum flour — plus xanthan and guar gum for structure. It produces a noticeably different texture: lighter, with a tender crumb that slices cleanly. The ghee adds richness without dairy heaviness. Store in the refrigerator — it keeps well.

Ingredients

Custom GF Flour Blend:

  • 1/2 cup tapioca flour
  • 1/2 cup white rice flour
  • 1/2 cup potato starch flour
  • 1/4 cup garbanzo and fava flour
  • 1/4 cup sweet white sorghum flour
  • 1 tsp xanthan gum
  • 1/2 tsp guar gum

Remaining Ingredients:

  • 1 tsp gluten-free baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 3/4 cup packed brown sugar
  • 1 cup mashed very ripe bananas (about 2 medium)
  • 1/2 cup ghee, measured melted
  • 1/4 cup almond milk, soy milk, or regular milk
  • 1 tsp pure vanilla extract
  • 2 eggs

Instructions

  1. Heat oven to 350°F. Generously spray the bottom and sides of a 9x5-inch loaf pan with cooking spray (without flour).
  2. In a small bowl, whisk together all the flours, xanthan gum, guar gum, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a medium bowl, beat together the brown sugar, mashed bananas, ghee, milk, vanilla, and eggs until well blended.
  4. Add the flour mixture to the wet ingredients and stir until thoroughly combined. Pour into the prepared pan.
  5. Bake 30 minutes. Cover loosely with foil, then bake an additional 25–30 minutes, until a toothpick inserted in the center comes out almost clean.
  6. Cool in pan for 5 minutes, then turn out onto a cooling rack. Cool completely (about 1 hour) before slicing. Wrap tightly and store in the refrigerator.
